Recipe: Tekila lime coconut bars

This recipe just reminds me my friend Joana (she loves Tekila and different recipes) and Digo (he loves coconut).

There, Summer is saying goodbye and here, Spring and Summer are arriving, so guess what?

An incredible recipe for adults to enjoy the hot weather from the blog, the Creative Mama.

2 cups flour
2 cups sugar
1/2 cup cold butter
4 eggs
1 1/2 cups sweetened coconut
1 teaspoon lime zest
1/3 cup fresh lime juice
3 Tablespoons tequila
1/2 teaspoon baking powder
1/4 teaspoon salt

Preheat your oven to 350 degrees. Line the bottom and sides of an 9×13 baking dish with parchment paper or tin foil, letting the paper hang over the sides. Spray lightly with cooking spray.

In a medium bowl, stir together 1 3/4 cup flour and 1/2 cup sugar. Cut in the butter with a pastry cutter, or a fork. Press this mixture into the bottom of the pan. Bake for 20 minutes or until the crust is lightly brown.

While the crust is cooking, whisk the eggs. Add in the coconut, lime zest, lime juice, tequila. In a small bowl, stir together 1/4 cup flour, baking powder, and salt. Add this to the egg mixture and combine. Pour over the hot crust.

Bake for 25 minutes. The filling needs to be set and the edges will be slightly brown. Let cool on a rack for an hour. Take the bars out of the pan and slice. Garnish with powdered sugar and slices of lime.
